Nanna Bread Round 2

The last time I made banana bread I was not completely happy with it. It was a bit dry and everyone knows that breakfast breads must be moist, warm and covered in butter. 

So I had to try again and this time it turned out muuuuch better. 


Why just choose one? Why not four?





Treats like these make for a much better morning. 
Any suggestions on which breakfast bread I should take on next??

Banana nanaa

On my last trip to Trader Joe's they were selling bananas for 16 cents a banana - I love a bargain. So I decided to grab the largest bunch I saw thinking I would eat them all before they spoiled. Ya, I can not eat that many bananas. Its impossible. So I sat there looking at my sad nanners (I just said that) and didn't want to throw them out - so wasteful. 
So I ran over to Vons and picked up some supplies and whipped up some Banana Bread. Breakfast breads are soo delicious...warm..with butter...mmm.  I was pretty happy with the turnout. I think next time I will add a half cup of oil or maybe some egg yolk to help it maintain more moisture. Either way, good sweet bread in the morning is a nice moment of contentment before heading towards 8.5 hours in a cube. 


RECIPE:
1/2 cup chopped walnuts
1 3/4 cup AP flour
3/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoons ground cinnamon
2 large eggs, lightly beaten, room temperture
1/2 cup unsalted butter, melted and cooled
3 ripe large bananas, mashed well
1 teaspoons vanilla extract

Preheat oven to 350 with oven rack in middle. Butter and flour the bottom and sides of a 9x5x3’’ loaf pan.
Place nuts on a baking sheet and bake for 8-10 minutes until lightly toasted.
In a large mixing bowl combine, flour, sugar, baking powder, baking soda, salt, and cinnamon. 
In another bowl, combine mashed bananas, eggs, melted butter and vanilla. Mix to combine. 
Fold the banana mixture into the dry ingredients just to combine (do not over mix batter!)
Scrape batter into pan and bake 55 minutes, until golden brown and a toothpick comes out clean.
